Cook Time 30 minutes
Total Time 45 minutes
Servings 4 servings

Ingredients

  • 2 tablespoons fine salt (table salt or fine sea salt)
  • 1 tablespoon garlic powder
  • 2 teaspoons onion powder
  • 2 teaspoons paprika (use smoked for a deeper note)
  • 1 teaspoon sugar (granulated or superfine)
  • 1 teaspoon black pepper, finely ground
  • 1/2 teaspoon white pepper (optional but recommended)
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • 1 teaspoon cornstarch (helps it stick)

Instructions

  • Measure and combine: Add all ingredients to a small bowl or jar. If using MSG or parsley, add them now.
  • Whisk or shake: Whisk until evenly mixed, breaking up any clumps. If using a jar, seal and shake for 15–20 seconds.
  • Taste and tweak: Dip a warm fry or a plain chip into a pinch to test. Adjust salt, sugar, or heat as needed.
  • Season the fries: Toss hot, freshly cooked fries in a large bowl with 1–2 teaspoons of seasoning per pound of fries. Add more to taste.
  • Finish with a little fat (optional): A quick mist of oil or melted butter helps the seasoning stick and adds richness. Toss again and serve immediately.
