Ingredients
  

  • 2 slices sturdy bread (sourdough, whole grain, or brioche)
  • 3–4 tablespoons cream cheese, softened (regular, light, or whipped)
  • 1/2 cup mixed berries (strawberries, blueberries, raspberries, blackberries)
  • 1–2 teaspoons honey or maple syrup, plus more to taste
  • 1/4 teaspoon lemon zest (optional but brightens the flavor)
  • 1/8 teaspoon vanilla extract (optional for a bakery vibe)
  • Small pinch of flaky sea salt (or a tiny pinch of table salt)
  • 1 teaspoon chopped fresh mint or basil (optional garnish)
  • 1 tablespoon sliced almonds or crushed pistachios (optional crunch)

Instructions
 

  • Toast the bread. Use a toaster or skillet until golden and crisp at the edges. Sturdier bread gives the best crunch against the creamy topping.
  • Soften the cream cheese. If it’s firm, let it sit for 5 minutes or microwave for 10–15 seconds to make spreading easier.
  • Flavor the cream cheese. In a small bowl, mix cream cheese with honey (or maple), lemon zest, vanilla, and a tiny pinch of salt. Taste and adjust sweetness.
  • Prep the berries. Rinse, pat dry, and slice larger berries. Dry berries won’t slide off and keep the toast crisp.
  • Assemble. Spread a thick layer of the sweetened cream cheese over warm toast. Top evenly with berries.
  • Finish with flair. Drizzle a touch more honey, sprinkle flaky salt, and add mint or nuts if you like. The salt and herbs make it pop.
  • Serve right away. This toast is best when the bread is still warm and the berries are fresh.
