Toast the bread. Use a toaster or skillet until golden and crisp at the edges.
Sturdier bread gives the best crunch against the creamy topping.
Soften the cream cheese. If it’s firm, let it sit for 5 minutes or microwave for 10–15 seconds to make spreading easier.
Flavor the cream cheese. In a small bowl, mix cream cheese with honey (or maple), lemon zest, vanilla, and a tiny pinch of salt. Taste and adjust sweetness.
Prep the berries. Rinse, pat dry, and slice larger berries. Dry berries won’t slide off and keep the toast crisp.
Assemble. Spread a thick layer of the sweetened cream cheese over warm toast.
Top evenly with berries.
Finish with flair. Drizzle a touch more honey, sprinkle flaky salt, and add mint or nuts if you like. The salt and herbs make it pop.
Serve right away. This toast is best when the bread is still warm and the berries are fresh.
